Ingredients
  

  • 4 medium-sized potatoes peeled and diced
  • 1 large onion finely chopped
  • 2 garlic cloves minced
  • 1 tbsp grated ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp garam masala
  • 1/4 tsp turmeric powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 1 lb fresh spinach washed and chopped
  • 1 tbsp olive oil
  • 1 tbsp lemon juice

Instructions
 

  • In a large pot, bring 4 cups of water to a boil. Add the diced potatoes and cook for 5-7 minutes until the potatoes are tender. Drain the potatoes and set them aside.
  • In the same pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and ginger and cook for 3-4 minutes until the onion is translucent.
  • Add the ground cumin, ground coriander, garam masala, turmeric powder, cayenne pepper, and salt. Stir well and cook for 1-2 minutes until fragrant.
  • Add the chopped spinach to the pot and stir well. Cover the pot and cook for 5-7 minutes until the spinach is wilted.
  • Add the cooked potatoes to the pot and stir well to combine with the spinach and spices. Cook for an additional 5-7 minutes until the potatoes are heated through.
  • Drizzle the lemon juice over the Aloo Palak and stir to combine.
  • Serve the Aloo Palak hot with rice or naan bread.
