VEGAN CHINESE TOFU AND VEGETABLE STIR FRY

  • Cutting board
  • Knife
  • Mixing bowl
  • Wooden spoon or spatula

Ingredients
  

  • 1 block of firm tofu drained and sliced into cubes
  • 2 tablespoons of vegetable oil
  • 2 cloves of garlic minced
  • 1 tablespoon of ginger minced
  • 1 small onion sliced
  • 1 red bell pepper sliced
  • 1 cup of snow peas trimmed
  • 1 cup of broccoli florets
  • 2 tablespoons of soy sauce
  • 1 tablespoon of hoisin sauce
  • 1 tablespoon of cornstarch
  • 1/4 cup of water
  • Salt and pepper to taste
  • Cooked rice to serve

Instructions
 

  • In a mixing bowl, combine soy sauce, hoisin sauce, cornstarch, and water. Mix until well combined and set aside.
  • Heat oil in a wok or large skillet over medium-high heat. Add garlic and ginger and cook for 1 minute.
  • Add onion and cook for 2-3 minutes until soft.
  • Add red bell pepper, snow peas, and broccoli florets. Stir-fry for 3-4 minutes until vegetables are tender.
  • Add the cubed tofu and stir-fry for another 2-3 minutes until heated through.
  • Pour the sauce mixture over the tofu and vegetables and stir to coat everything evenly.
  • Cook for another 1-2 minutes until the sauce thickens.
  • Season with salt and pepper to taste.
  • Serve hot with cooked rice.
