Vegan Mexican Potato Bites

KITCHEN TOOLS:

INGREDIENTS

  • 1 pound of potatoes
  • 1 tbsp of olive oil
  • ½ tsp red pepper, to be measured according to your preferences
  • ½ tsp of paprika
  • ½ tsp garlic powder
  • ¼ tsp onion powder

The garnish:

  • 4 tbsp guacamole
  • ½ pound of cherry tomatoes , halved
  • ½ red onion , minced
  • ½ jalapeno, thinly sliced
Vegan Mexican Potato Bites

DIRECTIONS

  • Preheat the oven to 440°F or start the barbecue.
  • Cut the potatoes into slices
  • Put them in a salad bowl; add the rest of the ingredients with a little salt and mix.
  • Place them on the baking sheet lined with baking paper and cook for 10 minutes; turn them over and cook for another 5 minutes until golden brown.
  • Take out of the oven; add the guacamole, cherry tomatoes, red onion and jalapeno.
  • Serve immediately and enjoy!
