  • 1 cup 260g vegan sour cream
  • 1 tbsp 15ml lime juice
  • 1/2 tsp 1g chili powder
  • Salt to taste

Instructions
 

  • Preheat your oven to 400°F (200°C). In a bowl, toss the sweet potato cubes with olive oil, smoked paprika, cumin, salt, and pepper. Spread them on a baking sheet and roast until tender and caramelized, about 25–30 minutes.
  • Meanwhile, gently warm the black beans in a pan and sprinkle with a dash of cumin and salt for extra flavor.
  • For the spicy lime crema, whisk together vegan sour cream, lime juice, chili powder, and a pinch of salt until smooth.
  • Warm the corn tortillas until soft and pliable. To assemble, layer the roasted sweet potatoes and black beans onto each tortilla, topping with avocado slices and fresh cilantro. Finish with a generous drizzle of the spicy lime crema.
