VEGAN ALOO PALAK
Ingredients
- 4 medium-sized potatoes peeled and diced
- 1 large onion finely chopped
- 2 garlic cloves minced
- 1 tbsp grated ginger
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp garam masala
- 1/4 tsp turmeric powder
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- 1 lb fresh spinach washed and chopped
- 1 tbsp olive oil
- 1 tbsp lemon juice
Instructions
- In a large pot, bring 4 cups of water to a boil. Add the diced potatoes and cook for 5-7 minutes until the potatoes are tender. Drain the potatoes and set them aside.
- In the same pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and ginger and cook for 3-4 minutes until the onion is translucent.
- Add the ground cumin, ground coriander, garam masala, turmeric powder, cayenne pepper, and salt. Stir well and cook for 1-2 minutes until fragrant.
- Add the chopped spinach to the pot and stir well. Cover the pot and cook for 5-7 minutes until the spinach is wilted.
- Add the cooked potatoes to the pot and stir well to combine with the spinach and spices. Cook for an additional 5-7 minutes until the potatoes are heated through.
- Drizzle the lemon juice over the Aloo Palak and stir to combine.
- Serve the Aloo Palak hot with rice or naan bread.
