Vegetarian Feijoada

Vegetarian feijoada is a Brazilian dish usually made with a variety of beans, pork, and beef. But for vegetarians or vegans like myself, this traditional dish can be made without meat. By replacing the meat with a variety of vegetables, legumes, and spices, one can still enjoy a hearty, flavorful feijoada without sacrificing any of the traditional flavors. To make a vegetarian feijoada, start by soaking a variety of beans in water overnight.
