Preheat your oven to 180°C (350°F). If you prefer to use a microwave, you can skip preheating the oven.
In a medium-sized saucepan, heat the almond milk, coconut milk, and sugar over medium heat until it comes to a simmer. Stir occasionally to dissolve the sugar.
Remove the saucepan from heat and stir in the vanilla extract, ground cinnamon, and a pinch of salt. Set the mixture aside.
In a baking dish, spread the torn bread pieces evenly.
Pour the milk mixture over the bread, making sure all the bread is soaked. Let it sit for a few minutes to absorb the liquid.
Sprinkle raisins, shredded coconut, and slivered almonds over the soaked bread.
Place the baking dish in the preheated oven and bake for 20-25 minutes until the top is golden brown and the mixture is bubbly. If using a microwave, microwave on high for 5-7 minutes until heated through.
Remove from the oven and let it cool slightly before serving.
Umm Ali can be served warm or at room temperature. You can garnish it with additional shredded coconut and slivered almonds if desired.
