Bangers and Mash

Ingredients

  • For the Vegetarian Sausages "Bangers":
  • 4 vegetarian sausages such as plant-based or tofu sausages
  • 2 tbsp olive oil
  • For the Mashed Potatoes "Mash":
  • 4 large potatoes peeled and cut into chunks
  • 1/4 cup unsweetened non-dairy milk e.g., almond milk, oat milk
  • 2 tbsp vegan butter or olive oil
  • Salt and pepper to taste
  • For the Onion Gravy:
  • 1 large onion thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp all-purpose flour
  • 2 cups vegetable broth
  • 1 tbsp soy sauce
  • Salt and pepper to taste

Instructions

  • Vegetarian Sausages ("Bangers"): In a skillet, heat the olive oil over medium heat. Add the vegetarian sausages and cook according to the package instructions until they are browned and heated through. Set aside.
  • Mashed Potatoes ("Mash"): In a large pot, bring water to a boil. Add the potato chunks and cook until they are fork-tender, about 15-20 minutes.
  • Drain the cooked potatoes and return them to the pot. Add the non-dairy milk and vegan butter (or olive oil). Mash the potatoes using a potato masher or a fork until smooth and creamy. Season with salt and pepper to taste. Keep warm.
  • Onion Gravy: In a separate skillet, heat the olive oil over medium heat. Add the sliced onions and sauté until they are soft and caramelized, about 10-15 minutes.
  • Sprinkle the flour over the onions and stir to coat them evenly.
  • Gradually add the vegetable broth and soy sauce to the skillet, stirring constantly to avoid lumps. Cook the gravy until it thickens and becomes smooth about 5 minutes. Season with salt and pepper to taste.
  • Assembly: Serve a portion of the mashed potatoes on each plate. Top with a vegetarian sausage ("banger") and generously spoon the onion gravy over the sausages and potatoes.
