Ingredients

  • 3 large ripe tomatoes finely chopped
  • 1 medium red onion finely diced
  • 2 jalapeños minced (deseeded for milder heat, optional)
  • 1 chipotle pepper in adobo sauce finely chopped
  • Juice of 1 lime
  • 1 teaspoon salt
  • A generous handful fresh cilantro chopped

Instructions

  • In a large bowl, combine the chopped tomatoes, red onion, jalapeños, and chipotle pepper.
  • Sprinkle in the salt and pour over the lime juice.
  • Add the chopped cilantro and stir well until all ingredients are evenly mixed.
  • Let the salsa rest for about 10 minutes to allow the flavors to meld.
  • Taste and adjust seasoning if needed. Serve fresh.

Notes

For extra heat, add a spoonful of adobo sauce from the chipotle can.
Great with tacos, burrito bowls, tortilla chips, or spooned over grilled veggies.
Best enjoyed fresh but keeps in the fridge for up to 2 days.
