Instructions
Preheat the Oven. Heat your oven to 400°F (200°C) — ideal for caramelizing the sweet potatoes and enhancing their natural sugars.
Prepare the Sweet Potatoes. In a large bowl, toss the sweet potato chunks with olive oil and a little salt. Spread them in a single layer on a baking sheet.
Roast the Sweet Potatoes. Roast for 25–30 minutes, aiming for a tender inside and crisp, glistening outside.
Make the Glaze. While roasting, whisk together maple syrup, cayenne pepper, and black pepper in a small bowl.
Glaze the Potatoes. At the 20-minute mark, remove the baking sheet and drizzle the spiced maple mixture over the sweet potatoes. Toss gently, then return to the oven for the remaining 5–10 minutes.
Serve and Garnish. Once perfectly roasted, give them one last toss and garnish with fresh parsley if desired. Serve hot and enjoy the sweet-and-peppery magic!
