Ingredients

  • 4 medium russet potatoes peeled and grated
  • 1 small onion grated
  • 2 tbsp all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2-3 tbsp vegetable oil for frying
  • Applesauce or sour cream for serving (optional)
  • Chopped fresh chives or parsley for garnish (optional)

Instructions

  • Preparation: After grating the potatoes and onion, squeeze out any excess moisture using a clean kitchen towel or paper towel. This will help prevent the pancakes from becoming soggy.
  • In a large bowl, combine the grated potatoes and onion.
  • Add the all-purpose flour, baking powder, salt, and black pepper to the bowl. Mix well to combine all the ingredients.
  • Frying: In a large skillet, heat about 2 tablespoons of vegetable oil over medium-high heat.
  • Take spoonfuls of the potato mixture and shape them into patties. Gently press the patties to flatten them slightly.
  • Carefully place the potato patties into the hot skillet. Cook for about 3-4 minutes on each side or until they are golden brown and crispy.
  • As the potato pancakes cook, you may need to add more oil to the skillet to prevent sticking and ensure even frying.
  • Once the potato pancakes are cooked and crispy, remove them from the skillet and place them on a paper towel-lined plate to drain any excess oil.
  • Serving: Serve the vegetarian potato pancakes warm. They can be enjoyed on their own or served with a dollop of applesauce or sour cream. Garnish with chopped fresh chives or parsley if desired.
