Pressing Tofu: Start by pressing the tofu to remove excess water. Cut the tofu into cubes suitable for skewering.
Marinade: In a bowl, whisk together all the marinade ingredients: soy sauce, peanut butter, lime juice, agave syrup, curry powder, turmeric, cumin, coriander, minced garlic, grated ginger, red pepper flakes, salt, and pepper.
Add the tofu cubes to the marinade, making sure they are coated evenly. Allow the tofu to marinate for at least 30 minutes or longer if time allows. You can marinate in the refrigerator.
Skewering: While the tofu is marinating, soak the wooden skewers in water. This prevents them from burning while cooking. Once the tofu is marinated, thread the tofu cubes onto the skewers.
Grilling/Baking: You can either grill the skewers on a barbecue or cook them in the oven. If grilling, preheat the grill to medium-high heat. If baking, preheat the oven to 375°F (190°C). Grill or bake the skewers for about 12-15 minutes, turning occasionally, until the tofu is cooked and has grill marks or is slightly browned.
Peanut Sauce: While the tofu skewers are cooking, prepare the peanut sauce. In a small bowl, whisk together the peanut butter, coconut milk, soy sauce, lime juice, and agave syrup. Add a little water to thin the sauce to your desired consistency.
Serving: Once the tofu skewers are cooked, remove them from the grill or oven.
Serve the tofu satay skewers with the peanut sauce for dipping.
Garnish with chopped fresh cilantro and crushed peanuts.
