Instructions
In a mixing bowl,
whisk
together rice vinegar, soy sauce, sugar, sesame oil, minced garlic, grated ginger, and red pepper flakes.
Add sliced cucumbers to the
mixing bowl
and toss until coated with the dressing.
Transfer the cucumbers to a serving dish and garnish with chopped scallions and sesame seeds.
Serve chilled or at room temperature.
