VEGAN CHINESE CUCUMBER SALAD

Ingredients

  • 2 large cucumbers thinly sliced
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 tsp grated ginger
  • 1/2 tsp red pepper flakes
  • 1/4 cup chopped scallions
  • 1 tbsp sesame seeds

Instructions

  • In a mixing bowl, whisk together rice vinegar, soy sauce, sugar, sesame oil, minced garlic, grated ginger, and red pepper flakes.
  • Add sliced cucumbers to the mixing bowl and toss until coated with the dressing.
  • Transfer the cucumbers to a serving dish and garnish with chopped scallions and sesame seeds.
  • Serve chilled or at room temperature.
