Vegan Poutine: Truffle and Maple Twist

Ingredients

Truffle Fries

  • 3 –4 large potatoes hand-cut into fries
  • 2 tbsp truffle oil plus more for drizzling
  • 1 tbsp olive oil optional, for crisping
  • Salt & pepper to taste

Porcini–Miso Gravy

  • 1 cup dried porcini mushrooms
  • 1 ½ cups boiling water for soaking
  • 1 tbsp miso paste
  • 1 tbsp soy sauce or tamari
  • 2 tbsp all-purpose flour
  • 2 tbsp vegan butter or olive oil
  • 1 tsp maple syrup to taste
  • Salt & pepper to taste

Creamy Cashew Cheese

  • 1 cup raw cashews soaked 2–4 hours or boiled 10 minutes
  • ¼ cup water
  • 2 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • ½ tsp garlic powder
  • ½ tsp salt
  • Optional: 1 tsp tapioca starch for stretchiness

Instructions

Make the Truffle Fries

  • Preheat oven to 425°F (220°C).
  • Toss hand-cut potato fries with truffle oil, olive oil, salt, and pepper.
  • Spread evenly on a baking sheet and bake 25–30 minutes until golden and crispy, flipping halfway.

Prepare the Porcini–Miso Gravy

  • Soak dried porcini mushrooms in boiling water for 10 minutes.
  • Strain, reserving the soaking liquid. Finely chop the mushrooms.
  • In a saucepan, melt vegan butter. Add flour and whisk to form a roux.
  • Slowly add the reserved mushroom broth while whisking.
  • Stir in chopped porcini mushrooms, miso paste, soy sauce, and maple syrup.
  • Simmer 5–7 minutes until thick and velvety. Season to taste.

Make the Cashew Cheese

  • Blend soaked cashews, water, nutritional yeast, lemon juice, garlic powder, and salt until smooth.
  • Add tapioca starch if you want a stretchier cheese.
  • Heat in a small pan on low for 2–3 minutes until warm, creamy, and slightly thickened.
  • Assemble the Soulful Poutine
  • Add crispy truffle fries to a bowl or serving plate.
  • Spoon generous amounts of hot porcini–miso gravy on top.
  • Add dollops or drizzles of warm cashew cheese.
  • Finish with an extra light drizzle of truffle oil for maximum aroma.
  • Serve
