Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic and ginger and stir-fry for 30 seconds, until fragrant.
Add the Chinese long beans and stir-fry for 2-3 minutes, until they begin to soften.
Add the soy sauce, sugar, salt, and white pepper and continue to stir-fry for an additional 3-4 minutes, until the beans are tender and slightly charred in places.
Remove the pan from the heat and drizzle with sesame oil, if desired.
Serve the stir-fried Chinese long beans hot as a side dish with rice or noodles. Enjoy!
