  • 1/2 cup 45g rolled oats
  • 1/4 cup 60g pumpkin puree
  • 1 tablespoon chia seeds
  • 1 teaspoon maple syrup
  • 1 teaspoon cinnamon
  • A pinch of ginger
  • A pinch of nutmeg optional, but highly recommended

Instructions

  • Mix the Base: In a jar or bowl, combine the rolled oats, almond milk, pumpkin puree, chia seeds, and maple syrup. Mix well, making sure the pumpkin is fully incorporated.
  • Spice It Up: Add in your cinnamon, ginger, and nutmeg (if you're using it). Give it another good stir to ensure all the spices are evenly distributed.
  • Chill Time: Cover your jar or bowl and pop it into the refrigerator overnight (or at least 4 hours).
  • Serve & Enjoy: In the morning, give your oats a good stir. If it's too thick for your liking, you can add a splash more of almond milk to reach your desired consistency.
