Ingredients
2cups260g all-purpose flour
1tsp5g baking powder
1/2tsp3g salt
3/4cup170g vegan butter, softened
1cup200g sugar
1/4cup60ml unsweetened almond milk
1tsp5ml mint extract
1/half tsp2.5ml vanilla extract
2tbsp30ml green food coloring (vegan-friendly)
1cup175g vegan chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, whisk together the flour, baking powder, and salt.
In a larger bowl, cream the vegan butter and sugar until light and fluffy. Mix in the almond milk, mint and vanilla extracts, and green food coloring.
Gradually mix the dry ingredients into the wet, stirring until just combined. Fold in the chocolate chips.
Drop spoonfuls of the dough onto the prepared baking sheet. Bake for 12–15 minutes, until the edges are just turning golden.
Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Add crushed candy canes for a festive twist.Chill the dough 30 minutes for thicker cookies.Swap almond milk for oat milk as needed.Reduce sugar to ¾ cup for a less sweet version.
