  • 2 cups 260g all-purpose flour
  • 1 tsp 5g baking powder
  • 1/2 tsp 3g salt
  • 3/4 cup 170g vegan butter, softened
  • 1 cup 200g sugar
  • 1/4 cup 60ml unsweetened almond milk
  • 1 tsp 5ml mint extract
  • 1/ half tsp 2.5ml vanilla extract
  • 2 tbsp 30ml green food coloring (vegan-friendly)
  • 1 cup 175g vegan chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, baking powder, and salt.
  • In a larger bowl, cream the vegan butter and sugar until light and fluffy. Mix in the almond milk, mint and vanilla extracts, and green food coloring.
  • Gradually mix the dry ingredients into the wet, stirring until just combined. Fold in the chocolate chips.
  • Drop spoonfuls of the dough onto the prepared baking sheet. Bake for 12–15 minutes, until the edges are just turning golden.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Add crushed candy canes for a festive twist.
Chill the dough 30 minutes for thicker cookies.
Swap almond milk for oat milk as needed.
Reduce sugar to ¾ cup for a less sweet version.
