  • 1/4 cup 60ml olive oil or vegan butter
  • 2 cups 300g chopped onions
  • 1 1/2 cups 225g chopped celery
  • 4 cloves garlic minced
  • 2 cups 250g chopped mushrooms (white or cremini)
  • 3 cups 720ml vegetable broth
  • 1/4 cup 60ml chopped fresh parsley
  • 1 tablespoon 15ml chopped fresh sage
  • 1 tablespoon 15ml chopped fresh rosemary
  • 1 tablespoon 15ml chopped fresh thyme
  • Salt and pepper to taste

  • Prep the Bread: If your bread isn’t already stale, cut it into cubes and leave it out overnight, or dry it out in the oven at 300°F (150°C) for about 15 minutes.
  • Cook the Veggies: In a large skillet, heat your olive oil or vegan butter over medium heat. Add the onions and celery, cooking until they become translucent (about 10 minutes). Add garlic and mushrooms, cooking until mushrooms are tender and released their juices (another 5-7 minutes).
  • Season It Up: Stir in the fresh herbs – sage, rosemary, and thyme – and let them cook for another minute to release their flavors. Season with salt and pepper.
  • Combine and Moisten: In a large mixing bowl, combine the bread cubes and the cooked veggie mixture. Gradually add in the vegetable broth while stirring until the bread is moistened but not soggy.
  • Bake to Perfection: Preheat your oven to 350°F (175°C). Transfer the stuffing mixture to a greased baking dish, cover with foil, and bake for 30 minutes. For a crispy top, uncover and bake for an additional 15 minutes or until lightly browned.
