One of the most rewarding things you can tackle in your kitchen is homemade puff pastry. There’s something so magical about turning simple ingredients into a golden, flaky masterpiece. So, let’s dive into crafting that exquisite dough.

The Magic of Dough

Puff pastry starts with the simplest of building blocks: flour, salt, water, and vegan butter. But it’s the way you handle these ingredients that creates something truly special.

Ingredients:

  • 2 1/2 cups (320g) all-purpose flour, plus extra for dusting
  • 1 cup (240ml) cold water
  • 1 tsp salt
  • 1 cup (225g) vegan butter, chilled and cut into 1/2 inch chunks

To get started, you’ll want to mix your flour and salt in a large bowl. Slowly add the cold water, stirring until the dough just comes together. It’s going to feel a bit loose and sticky at this point, but don’t worry! Turn the dough out onto a floured surface and knead it gently until it forms a smooth, elastic ball.

Wrap the dough in plastic wrap and let it rest in the fridge for about 30 minutes. This resting period lets the gluten in the flour relax, setting the stage for those dreamy, flaky layers.

From Rolling to Folding

Here’s where the magic happens. Rolling and folding the dough, known as laminating, creates those signature layers in a puff pastry. This part can be a workout, but think of it as a fun alternative to your morning yoga session.

Take your chilled dough and roll it out into a rectangle about 12 inches (30cm) long and 6 inches (15cm) wide. Place your cold chunks of vegan butter over the lower two-thirds of the dough, leaving a small border around the edges. Fold the top third of the dough down, then fold the bottom third up over it, like folding a letter. Make sure the edges are aligned, and pinch the seams together to seal in the butter.

Turn your folded dough 90 degrees, roll it out into a large rectangle again, and repeat the folding process. You’ll want to do this rolling-and-folding exercise about six times. After each fold, let the dough rest in the fridge for about 20 minutes. This process builds up all those beautiful layers we’re aiming for.

Turning Dough into Delicious Pastries

Now, onto the grand finale. Whether you’re making croissants, tarts, or turnovers, the baking process brings your hard work to life.

Preheat your oven to 400°F (200°C). Roll out your puff pastry dough one final time to your desired thickness. Now the possibilities are endless! If you want that perfect golden color, brush them with a bit of almond milk. Bake for 20-25 minutes, or until they’re puffed and golden brown, rotating the sheets halfway through for even baking.

Let your pastries cool slightly before diving in. Sharing these flaky delights and watching others enjoy them is one of my favorite things—almost as good as tasting that first bite of buttery, flaky heaven.
