Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped

  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup (240g) butternut squash, cubed
  • 2 cans (400g each) diced tomatoes
  • 1 can (400g) black beans, drained
  • 1 can (400g) kidney beans, drained
  • 1 packet chili seasoning
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Add bell pepper, zucchini, and butternut squash, and cook until vegetables soften.
  3. Stir in tomatoes, beans, chili seasoning, salt, and pepper.
  4. Let simmer for 30 minutes, stirring occasionally.
  5. Serve hot, garnished with a dollop of vegan sour cream and some chopped green onions.

  • 1 cup (200g) sugar
  • 1/4 cup (21g) cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (240ml) water
  • 1/3 cup (80ml) vegetable oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • Vegan buttercream frosting
  • Mini dark chocolate chips for eyes

Instructions:

  1. Preheat oven to 180°C (350°F) and line a cupcake tin with liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  3. Add water, vegetable oil, apple cider vinegar, and vanilla extract. Mix until smooth.
  4. Divide batter evenly among the cupcake liners.
