Apple Strudel
Ingredients
For the Filling:
- 4 medium apples such as Granny Smith, peeled, cored, and thinly sliced
- 1/2 cup granulated sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup raisins optional
- 1/2 cup chopped walnuts or pecans optional
- Juice of 1 lemon
For Assembling:
- 8-10 sheets vegan filo pastry thawed if frozen
- 1/4 cup vegan butter or melted coconut oil
- 1/2 cup breadcrumbs
- Powdered Sugar
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Filling: In a large bowl, combine the sliced apples, granulated sugar, ground cinnamon, ground nutmeg, raisins (if using), chopped nuts (if using), and lemon juice. Toss everything together until the apples are coated with the mixture. Set aside.
- In a small skillet, melt a small amount of vegan butter or coconut oil. Add the breadcrumbs and toast them lightly until they are golden brown. Remove from heat and set aside.
- Assembling: Lay a sheet of vegan filo pastry on a clean surface. Brush it lightly with melted vegan butter or coconut oil.
- Place another sheet of filo pastry on top, slightly overlapping the first sheet. Brush with more melted butter or oil.
- Repeat the process with 2-3 more sheets of filo pastry, brushing each layer with melted butter or oil.
- Sprinkle about a tablespoon of toasted breadcrumbs along the long edge of the layered filo pastry. This will help absorb any excess moisture from the apple filling.
- Filling the Strudel: Spread the apple filling over the breadcrumbs, leaving a border around the edges.
- Carefully roll the filo pastry and apple filling into a log, tucking in the sides as you go. Place the strudel seam side down on the prepared baking sheet.
- Brush the top of the strudel with more melted vegan butter or oil.
- Baking: Bake the apple strudel in the preheated oven for about 30-35 minutes, or until the pastry is golden brown and the apples are tender.
- Serving: Once the strudel is baked, remove it from the oven and let it cool slightly before slicing.
- Dust the sliced strudel with powdered sugar.
- Serve the vegan apple strudel warm, optionally with a dollop of vegan whipped cream or a scoop of vegan vanilla ice cream.
