Creamy Avocado & White Bean Dip

A Rich and Nutrient-Packed Starter

Avocado and White Bean Dip

Prep Time: 10 minutes
Serves: 4–6

Ingredients

  • 1 ripe avocado, peeled and pitted

  • 1 cup (200g) cooked white beans (cannellini or navy)

  • 2 tablespoons (30ml) lemon juice

  • 1 clove garlic, minced

  • Salt and pepper, to taste

  • Pinch of cumin (optional)

  • 2 tablespoons (30ml) olive oil

  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. In a food processor, blend avocado, white beans, lemon juice, garlic, salt, pepper, and cumin until smooth.

  2. Slowly add olive oil while blending until creamy.

  3. Garnish with fresh cilantro.

  4. Serve with veggie sticks, pita chips, or warm flatbread.

Tip: Add a dash of smoked paprika or lime juice for extra flair!

Spicy Roasted Red Pepper Hummus

A Fiery Twist on a Classic

Spicy Roasted Red Pepper Hummus

Prep Time: 10 minutes
Serves: 4–6

Ingredients:

  • 1 cup (130g) roasted red peppers

  • 1 can (15 oz or 425g) chickpeas, drained and rinsed

  • 2 tablespoons (30ml) tahini

  • 1 clove garlic, minced

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon chili flakes (adjust to taste)

  • Juice of 1 lemon

  • Salt, to taste

  • 2 tablespoons (30ml) olive oil

  • Fresh parsley, for garnish

Instructions:

  1. Blend roasted peppers, chickpeas, tahini, garlic, cumin, chili flakes, lemon juice, and salt until smooth.

  2. While blending, drizzle in olive oil for a creamy texture.

  3. Taste and adjust seasoning if needed.

  4. Garnish with chopped parsley and a sprinkle of chili flakes.

Optional: Serve with warm pita wedges, cucumber slices, or over grain bowls.

Healthy Beetroot & Tahini Dip

A Colorful, Antioxidant-Packed Delight

Ingredients:

  • 2 medium beetroots, cooked and peeled

  • 1/4 cup (60ml) tahini

  • 2 cloves garlic, minced

  • Juice of 1 lemon

  • Salt and pepper, to taste

  • 2 tablespoons (30ml) olive oil

  • Sesame seeds, for garnish

Instructions:

  1. Add beets, tahini, garlic, lemon juice, salt, and pepper to a blender or food processor. Blend until smooth.

  2. Slowly drizzle in olive oil and blend to desired consistency.

  3. Sprinkle sesame seeds over the top for texture and presentation.

  4. Serve chilled with crackers, toast points, or veggie crudités.

Bonus: This dip makes a stunning centerpiece on any snack board!
