Potato Pancakes
Ingredients
- 4 medium russet potatoes peeled and grated
- 1 small onion grated
- 2 tbsp all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2-3 tbsp vegetable oil for frying
- Applesauce or sour cream for serving (optional)
- Chopped fresh chives or parsley for garnish (optional)
Instructions
- Preparation: After grating the potatoes and onion, squeeze out any excess moisture using a clean kitchen towel or paper towel. This will help prevent the pancakes from becoming soggy.
- In a large bowl, combine the grated potatoes and onion.
- Add the all-purpose flour, baking powder, salt, and black pepper to the bowl. Mix well to combine all the ingredients.
- Frying: In a large skillet, heat about 2 tablespoons of vegetable oil over medium-high heat.
- Take spoonfuls of the potato mixture and shape them into patties. Gently press the patties to flatten them slightly.
- Carefully place the potato patties into the hot skillet. Cook for about 3-4 minutes on each side or until they are golden brown and crispy.
- As the potato pancakes cook, you may need to add more oil to the skillet to prevent sticking and ensure even frying.
- Once the potato pancakes are cooked and crispy, remove them from the skillet and place them on a paper towel-lined plate to drain any excess oil.
- Serving: Serve the vegetarian potato pancakes warm. They can be enjoyed on their own or served with a dollop of applesauce or sour cream. Garnish with chopped fresh chives or parsley if desired.
