VEGAN BRAISED SHIITAKE MUSHROOMS
As a vegan, I am eternally grateful for shiitake mushrooms. They offer the best way to get a mouthful of umami flavor without grilling a steak. And these braised shiitake mushrooms do not disappoint. This is essentially a Chinese recipe that brings in a variety of bold flavors from ingredients like agave syrup, rice wine, and sesame oil. The more the merrier, I say. Better still, it’s a healthy recipe with only 118 calories and 6 grams of fat–try getting that from a filet mignon.
Ingredients
- 1 pound shiitake mushrooms stemmed and sliced
- 2 tablespoons vegetable oil
- 2 cloves garlic minced
- 1 tablespoon grated ginger
- 1/4 cup soy sauce
- 1/4 cup vegetable broth
- 1/4 cup rice wine
- 2 tablespoons agave syrup
- 2 tablespoons cornstarch
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 2 green onions sliced
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic and ginger and sauté for 1-2 minutes.
- Add the sliced shiitake mushrooms to the skillet and stir to coat with the oil, garlic, and ginger. Sauté for 5-7 minutes, until the mushrooms are tender and golden brown.
- In a mixing bowl,
whisk together the soy sauce, vegetable broth, rice wine, agave syrup, cornstarch, sesame oil, and rice vinegar. - Pour the sauce over the mushrooms in the skillet and stir to coat. Bring the mixture to a simmer and cook for 5-7 minutes, until the sauce has thickened and the mushrooms are fully coated.
- Remove the skillet from the heat and sprinkle the sliced green onions over the top of the mushrooms.
- Serve the braised shiitake mushrooms hot, garnished with additional sliced green onions if desired. Enjoy!
