VEGAN EGYPTIAN UMM ALI

Ingredients
  

  • 4 cups day-old bread torn into small pieces
  • 2 cups almond milk or any non-dairy milk
  • 1/2 cup coconut milk
  • 1/4 cup sugar
  • 1/4 cup raisins
  • 1/4 cup shredded coconut
  • 1/4 cup slivered almonds
  • 1/2 teaspoon vanilla extract
  • Pinch of ground cinnamon
  • Pinch of salt

Instructions
 

  • Preheat your oven to 180°C (350°F). If you prefer to use a microwave, you can skip preheating the oven.
  • In a medium-sized saucepan, heat the almond milk, coconut milk, and sugar over medium heat until it comes to a simmer. Stir occasionally to dissolve the sugar.
  • Remove the saucepan from heat and stir in the vanilla extract, ground cinnamon, and a pinch of salt. Set the mixture aside.
  • In a baking dish, spread the torn bread pieces evenly.
  • Pour the milk mixture over the bread, making sure all the bread is soaked. Let it sit for a few minutes to absorb the liquid.
  • Sprinkle raisins, shredded coconut, and slivered almonds over the soaked bread.
  • Place the baking dish in the preheated oven and bake for 20-25 minutes until the top is golden brown and the mixture is bubbly. If using a microwave, microwave on high for 5-7 minutes until heated through.
  • Remove from the oven and let it cool slightly before serving.
  • Umm Ali can be served warm or at room temperature. You can garnish it with additional shredded coconut and slivered almonds if desired.
