Vegetarian Chocolate Peanut Butter Banana Nice Cream Sundae

VEGETARIAN CHOCOLATE PEANUT BUTTER BANANA NICE CREAM SUNDAE

Father’s Day is just around the corner, which means it’s time to start thinking about Dad’s favorite dishes. My dad has a notorious sweet tooth and his all-time favorite dish is a decadent chocolate peanut butter banana ice cream sundae. Whenever I’m home for Father’s Day, I make sure to whip one up for him. Recently, I’ve switched out ice cream for an almond milk “nice cream,” mostly so I can dig in as well! My dad swears he loves this updated version just as much and, from the way he scarfs it down, I believe him. But I’ll let you be the judge. Let me know how you enjoy this delicious sweet treat!

Equipment

  • Blender or food processor
  • Ice cream scoop
  • Serving bowls

Ingredients
  

  • 2 large ripe bananas sliced and frozen
  • 2 tablespoons cocoa powder
  • 2 tablespoons peanut butter creamy or chunky
  • 2 tablespoons almond milk or any other plant-based milk
  • 1 tablespoon maple syrup or agave syrup optional, for added sweetness
  • 1/4 teaspoon vanilla extract
  • Toppings optional: sliced bananas, chopped nuts, shredded coconut, chocolate chips, whipped coconut cream

Instructions
 

  • In a blender or food processor, combine the frozen banana slices, cocoa powder, peanut butter, almond milk, vanilla extract, and maple syrup (if using). Blend until smooth and creamy, scraping down the sides of the blender or food processor as needed. If the
  • mixture is too thick, you can add a splash more almond milk to help it blend.
  • Transfer the nice cream mixture to a freezer-safe container and freeze for at least 4 hours, or until firm.
  • Once the nice cream is frozen, remove it from the freezer and let it sit at room temperature for a few minutes to soften slightly. Use an ice cream scoop to portion the nice cream into serving bowls.Sprinkle your favorite toppings over the nice cream
