If, as a vegan, you feel like you’re missing out on all the gyro fun, this is the perfect recipe for you. Ideally, gyros are cooked on a vertical spit, as I’m sure you’ve seen at Greek restaurants. Since I don’t expect you to have one in your home kitchen (and since tofu doesn’t stack quite as nicely as meat), we will sautee our tofu until it’s crispy and golden brown, like delicious gyro shavings. And let me tell you, the accompanying vegan tzatziki recipe is good to have on hand, even if you don’t plan on making gyros again. It’s a great dipping sauce that can also enliven even the most lackluster veggie sandwich. Although, if you’ve been following my recipes, your sandwich game should be pretty smooth by now.

  • For the gyro filling:
  • 1 block of extra firm tofu drained and crumbled
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • 4-6 pita breads
  • 1 cup lettuce shredded
  • 1 cup tomato diced
  • 1/2 cup red onion thinly sliced
  • For the tzatziki sauce:
  • 1 cup vegan yogurt
  • 1/2 cup cucumber grated and drained
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill chopped
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium-high heat. Add the crumbled tofu, garlic, lemon juice, oregano, salt, and pepper. Cook for 10-15 minutes, or until the tofu is crispy and golden brown.
  • While the tofu is cooking, prepare the tzatziki sauce. In a mixing bowl, combine the vegan yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper. Mix well and set aside.
  • Warm the pita bread in the oven for 2-3 minutes.
  • To assemble the gyro, spread a generous amount of tzatziki sauce on each pita bread. Add a layer of shredded lettuce, diced tomato, sliced red onion, and the cooked tofu. Roll up the pita and serve.
