VEGAN QUESO FUNDIDO
Ingredients
- 1 cup raw cashews soaked for at least 4 hours or overnight
- 1/4 cup nutritional yeast
- 1/4 cup tapioca starch
- 1/2 cup vegetable broth
- 2 tbsp. tomato paste
- 1 tsp. smoked paprika
- 1/2 tsp. garlic powder
- 1/4 tsp. onion powder
- Salt and black pepper to taste
- 1/4 cup chopped cilantro
- 1-2 jalapeño peppers seeded and finely chopped
- Sliced avocado for serving
- Tortilla chips or warm tortillas for dipping
Instructions
- Drain and rinse the soaked cashews. Add them to a
blender along with nutritional yeast, tapioca starch, vegetable broth, tomato paste, smoked paprika, garlic powder, onion powder, salt, and black pepper. Blend until completely smooth. - Pour the mixture into a skillet over medium heat. Cook for 10-15 minutes, stirring constantly with a wooden spoon, until the mixture thickens and becomes stretchy like cheese.
- Add the chopped cilantro and jalapeño peppers to the
skillet and stir well to combine. - Serve the queso fundido hot, with sliced avocado and tortilla chips or warm tortillas for dipping.
