VEGAN CHINESE CUCUMBER SALAD

Ingredients
- 2 large cucumbers thinly sliced
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp sesame oil
- 2 cloves garlic minced
- 1 tsp grated ginger
- 1/2 tsp red pepper flakes
- 1/4 cup chopped scallions
- 1 tbsp sesame seeds
Instructions
- In a mixing bowl,
whisk together rice vinegar, soy sauce, sugar, sesame oil, minced garlic, grated ginger, and red pepper flakes. - Add sliced cucumbers to the
mixing bowl and toss until coated with the dressing. - Transfer the cucumbers to a serving dish and garnish with chopped scallions and sesame seeds.
- Serve chilled or at room temperature.
