Ingredients
  

  • 8 oz. soba noodles
  • 2 tbsp. sesame oil
  • 1 onion chopped
  • 4 garlic cloves minced
  • 2 tbsp. soy sauce
  • 1 tbsp. rice vinegar
  • 1 tbsp. maple syrup
  • 1 tsp. grated ginger
  • 1 red bell pepper sliced
  • 1 cup sliced shiitake mushrooms
  • 2 cups chopped bok choy
  • 1/4 cup chopped scallions
  • Sesame seeds for garnish

Instructions
 

  • Cook soba noodles according to package instructions. Drain and set aside.
  • In a skillet, heat sesame oil over medium-high heat. Add onion, garlic, and ginger and cook for 2-3 minutes, until the onion is soft and translucent.
  • Add red bell pepper and shiitake mushrooms to the skillet and cook for another 5-7 minutes, until the vegetables are tender.
  • In a small bowl, whisk together soy sauce, rice vinegar, maple syrup, and 1/4 cup of water.
  • Add bok choy and scallions to the skillet and cook for 2-3 minutes, until the bok choy is wilted.
  • Add the cooked soba noodles to the skillet and pour the sauce over everything. Toss until everything is well coated in the sauce.
  • Garnish each serving with sesame seeds and serve hot.
