VEGAN STIR-FRIED CHINESE LONG BEANS
Ingredients
- 1 lb. Chinese long beans trimmed and cut into 2-3 inch pieces
- 3-4 cloves garlic minced
- 1
tablespoon fresh ginger minced - 1 tablespoon vegetable oil
- 1 tablespoon soy sauce
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1 teaspoon sesame oil optional
Instructions
- Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic and ginger and stir-fry for 30 seconds, until fragrant.
- Add the Chinese long beans and stir-fry for 2-3 minutes, until they begin to soften.
- Add the soy sauce, sugar, salt, and white pepper and continue to stir-fry for an additional 3-4 minutes, until the beans are tender and slightly charred in places.
- Remove the pan from the heat and drizzle with sesame oil, if desired.
- Serve the stir-fried Chinese long beans hot as a side dish with rice or noodles. Enjoy!
