Ingredients
  

  • 1 cup raw cashews soaked for at least 4 hours or overnight
  • 1/4 cup nutritional yeast
  • 1/4 cup tapioca starch
  • 1/2 cup vegetable broth
  • 2 tbsp. tomato paste
  • 1 tsp. smoked paprika
  • 1/2 tsp. garlic powder
  • 1/4 tsp. onion powder
  • Salt and black pepper to taste
  • 1/4 cup chopped cilantro
  • 1-2 jalapeño peppers seeded and finely chopped
  • Sliced avocado for serving
  • Tortilla chips or warm tortillas for dipping

Instructions
 

  • Drain and rinse the soaked cashews. Add them to a blender along with nutritional yeast, tapioca starch, vegetable broth, tomato paste, smoked paprika, garlic powder, onion powder, salt, and black pepper. Blend until completely smooth.
  • Pour the mixture into a skillet over medium heat. Cook for 10-15 minutes, stirring constantly with a wooden spoon, until the mixture thickens and becomes stretchy like cheese.
  • Add the chopped cilantro and jalapeño peppers to the skillet and stir well to combine.
  • Serve the queso fundido hot, with sliced avocado and tortilla chips or warm tortillas for dipping.
