Exploring the Flavors: Why Cranberry and Orange?

Oh, the magical duo of cranberry and orange! The sharp, tart flavor of cranberries intertwined with the sweet, vibrant burst of orange brings back memories of cozy winter evenings and joyous celebrations. I learned during my food adventures that many cultures see cranberries and oranges as symbols of prosperity and cheer during the gloomy months, making them a favorite in seasonal dishes. Their bold colors brighten up any table setting, bringing a spark of joy, don’t you think?

As a vegan chef, it’s thrilling to reinvent traditional flavors with a modern twist. These cranberry orange brioche rolls are my plant-based take on a classic holiday treat, designed not just to delight the taste buds but also to spark discussions on how we can embrace time-honored tastes in sustainable, contemporary ways.

Creating a Vegan Twist: Substitutes for Traditional Brioche Ingredients

Traditional brioche is all about that buttery, tender texture, usually achieved with lots of butter and eggs. Switching to a vegan formula meant getting creative in the kitchen! I replaced eggs with silken tofu, which creates the soft, rich texture essential to any good brioche. Vegan butter steps in for regular butter, delivering the melt-in-your-mouth fatness without any dairy.

Often, brioche recipes include honey for a touch of sweetness, but I opted for pure maple syrup which complements the fresh zestiness of the orange without overwhelming it. These swaps keep the luxurious feel of classic brioche while ensuring the recipe is entirely animal-friendly. Indulging doesn’t have to come with guilt!

Step-by-Step Recipe for Cranberry Orange Vegan Brioche Rolls

Ingredients:

  •  4 cups (520g) all-purpose flour
  •  1 cup (240ml) warm almond milk (about 110°F/43°C)
  •  1/2 cup (112g) vegan butter, melted
  •  1/4 cup (60ml) pure maple syrup
  •  1/2 cup (120g) silken tofu, blended until smooth
  •  Zest of 2 large oranges
  •  1 cup (100g) dried cranberries
  •  2 1/4 teaspoons instant yeast
  •  1 teaspoon salt

Instructions:

  1. Mix the warm almond milk, maple syrup, and yeast in a large bowl. Let it sit for about 5 minutes until it’s frothy, showing that the yeast is active.
  2. Add the melted vegan butter, blended tofu, orange zest, and salt to the yeast mixture. Gradually fold in the flour, mixing until a dough starts to form. It should be sticky but manageable.
  3. Knead the dough on a floured surface for 8-10 minutes, adding more flour as needed, until it’s smooth and elastic. Work the dried cranberries into the dough.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm spot for 1.5-2 hours, or until it has doubled in size.
  5. Punch down the risen dough, turn it onto a floured surface, and divide it into 12 equal pieces. Shape each piece into a roll and arrange in a greased baking dish. Cover and let rise again for 30 minutes.
  6. Bake at 375°F (190°C) for 20-25 minutes, or until golden brown. Let them cool a bit before serving.

Visualize serving these fluffy, golden-brown brioche rolls fresh from the oven. For a homey, rustic appeal, arrange them in a cast-iron skillet in a circular pattern; they pull apart wonderfully, perfect for sharing. Drizzle them with a simple glaze made of fresh orange juice and powdered sugar to enhance their sweetness.

Complement these rolls with a steaming cup of vegan cocoa for a comforting treat, or offer them with a savory vegan roast to balance the sweetness. They’re also fabulous for brunch—pair them with a tofu scramble or vegan sausage for a satisfying meal.
