  • 3 cups 720 ml vegetable broth
  • 1 cup 130g roughly chopped walnuts
  • 2 tbsp 30 ml olive oil
  • 1 large onion finely chopped
  • 2 medium carrots grated
  • 2 celery sticks finely chopped
  • 2 garlic cloves minced
  • 2 tbsp 30 ml tomato paste
  • 1 tbsp 15 ml soy sauce or tamari
  • 1 tsp 5ml chopped fresh thyme
  • 1/2 cup 65g bread crumbs
  • 2 tbsp ground flaxseeds + 6 tbsp water 30 ml + 90 ml
  • Salt and pepper to taste
  • 1/4 cup 60 ml pure maple syrup

Instructions
 

  • Preheat your oven to 375°F (190°C). Cook lentils in vegetable broth until tender, about 25–30 minutes; drain any excess liquid.
  • Heat olive oil in a skillet and sauté onions, carrots, celery, and garlic until soft. Add lentils, walnuts, tomato paste, soy sauce, and thyme, cooking together for a few minutes.
  • Transfer to a large bowl, mixing in bread crumbs and the flaxseed mixture. Season with salt and pepper.
  • Scoop the mixture into a lined loaf pan. Stir a pinch of salt into the maple syrup and brush it over the top of the loaf.
  • Bake for about 40 minutes, or until the top is sticky and crisped to perfection. Let cool for 10 minutes before slicing.
