What’s better than waking up to a stack of fluffy pancakes? Waking up to matcha-infused vegan pancakes! Whether it’s a leisurely Sunday or a bustling Monday morning, these pancakes add a splash of color and a burst of energy to start your day.

Here’s my go-to recipe: Mix 1 cup (130g) of all-purpose flour, 2 tablespoons (30g) of sugar, 2 teaspoons (10g) of baking powder, and a pinch of salt in a bowl. Add 1 tablespoon (15g) of matcha powder to give the dry mix abeautiful green color. In a separate bowl, mix 1 cup (240ml) of almond milk with 1 tablespoon (15ml) of apple cider vinegar (hello, vegan buttermilk!) and 3 tablespoons (45ml) of melted coconut oil. Gently combine the wet and dry ingredients—don’t overmix; a few lumps are fine! Cook them on a non-stick pan until golden on each side. Serve hot with a drizzle of agave syrup and fresh berries for a delightful meal.

Add 2 tablespoons (30g) of matcha powder to infuse them with that vibrant green color and an energizing boost. Roll the mixture into balls and coat each one in unsweetened shredded coconut. Chill them in the fridge for about an hour to set—your snack is now ready to enjoy!

Pour the mixture into popsicle molds and freeze for about 4-6 hours. To release the pops, just run warm water over the outside of the molds. The first taste will transport you back to childhood—but this time, the joy comes with a side of antioxidants!
