This dish bursts with layers of rich tomato sauce, creamy vegan ricotta, and an assortment of garden-fresh veggies, all nestled between tender sheets of pasta.
Here’s how you can whip it up:
Generous Garden Lasagna Recipe
Ingredients
For the Rich Tomato Sauce
- 2 tablespoons olive oil
- 1 large onion finely chopped
- 4 garlic cloves minced
- 2 cans 28 oz / 800 g each crushed tomatoes
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- Salt to taste
- Black pepper to taste
For the Vegan Ricotta
- 2 cups 260 g raw cashews, soaked and drained
- 1 tablespoon lemon juice
- 1 tablespoon nutritional yeast
- Salt to taste

- 1 zucchini sliced
- 1 red bell pepper sliced
- 2 cups fresh spinach

- Vegan lasagna noodles cooked according to package instructions
Instructions

- Prepare the vegan ricotta: In a blender or food processor, combine the soaked cashews, lemon juice, nutritional yeast, and salt. Blend until smooth, adding water gradually to achieve a ricotta-like consistency.
- Cook the vegetables: Heat olive oil in a skillet over medium heat. Add the zucchini and bell pepper and sauté for 5–7 minutes until tender. Add the spinach and cook just until wilted. Remove from heat.
