VEGAN PEACH COBBLER

Those who have been following my blog know that I have done some serious traveling in Georgia. When I’m there, I have to do two things: chow down on (vegan) BBQ and stuff my face with all peach everything. Of course, one of my favorite peach dishes is the classic peach cobbler. They’ve been baking this sweet treat in the South since the late 18th century, and this dish combines aspects of my favorite recipes. It’s a proudly old-fashioned recipe, no bells and whistles here. Just that classic scratch-made goodness.

  • Springform pan (8 or 9 inches)

Ingredients
  

For the Peach Filling:

  • 5-6 medium peaches peeled, pitted, and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

For the Cobbler Topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/3 cup vegan butter melted
  • 1/3 cup non-dairy milk e.g., almond milk, soy milk
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Peach Filling: In a mixing bowl, combine the sliced peaches, granulated sugar, cornstarch, lemon juice, vanilla extract, and ground cinnamon. Toss until the peaches are coated in the mixture.
  • Transfer the peach mixture to a greased 9x9-inch baking dish or a similar-sized baking dish.
  • Cobbler Topping: In another bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  • Add the melted vegan butter, non-dairy milk, and vanilla extract to the dry ingredients. Mix until just combined; do not overmix.
  • Drop spoonfuls of the cobbler topping over the peach mixture in the baking dish. It's okay if the topping is not perfectly spread out; it will expand as it bakes.
  • Place the baking dish in the preheated oven and bake for about 40-45 minutes, or until the topping is golden brown and the peach filling is bubbling.
  • Remove the cobbler from the oven and let it cool for a few minutes before serving.
  • Serve your vegan peach cobbler warm, either on its own or with a scoop of vegan vanilla ice cream or whipped cream.
  • Enjoy this delicious and comforting dessert!
