VEGAN SOBA NOODLES
Ingredients
- 8 oz. soba noodles
- 2 tbsp. sesame oil
- 1 onion chopped
- 4 garlic cloves minced
- 2 tbsp. soy sauce
- 1 tbsp. rice vinegar
- 1 tbsp. maple syrup
- 1 tsp. grated ginger
- 1 red bell pepper sliced
- 1 cup sliced shiitake mushrooms
- 2 cups chopped bok choy
- 1/4 cup chopped scallions
- Sesame seeds for garnish
Instructions
- Cook soba noodles according to package instructions. Drain and set aside.
- In a skillet, heat sesame oil over medium-high heat. Add onion, garlic, and ginger and cook for 2-3 minutes, until the onion is soft and translucent.
- Add red bell pepper and shiitake mushrooms to the skillet and cook for another 5-7 minutes, until the vegetables are tender.
- In a small bowl, whisk together soy sauce, rice vinegar, maple syrup, and 1/4 cup of water.
- Add bok choy and scallions to the skillet and cook for 2-3 minutes, until the bok choy is wilted.
- Add the cooked soba noodles to the skillet and pour the sauce over everything. Toss until everything is well coated in the sauce.
- Garnish each serving with sesame seeds and serve hot.
