Vegetarian Baked Berry Crisp

I recently shared a recipe for a savory bean and lentil crisp, but luckily for you all, that is just the beginning of my crisp repertoire. Another fav is this sweet vegetarian baked berry crisp. Berries are really good for you—almost good enough to atone for all the sugar and butter this recipe calls for. Hey, you have to indulge sometimes, right? This recipe works great as a breakfast dish or as a dessert, especially when you add a dollop of whipped cream or vanilla ice cream.

Ingredients
  

Filling:

  • 4 cups mixed berries such as strawberries, blueberries, raspberries, and blackberries
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract

Topping:

  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter cold and cubed

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the mixed berries, granulated sugar, flour, lemon juice, and vanilla extract. Gently toss until the berries are evenly coated.
  • Pour the berry mixture into an 8x8-inch (or similar) baking dish and spread it out evenly.
  • In a medium mixing bowl, combine the rolled oats, flour, brown sugar, ground cinnamon, and salt.
  • Add the cold, cubed butter to the mixture. Use your fingers or a pastry cutter to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  • Sprinkle the oat topping evenly over the berry mixture in the baking dish.
  • Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the berry filling is bubbling.
  • Remove the baking dish from the oven using oven mitts and place it on a cooling rack. Allow the berry crisp to cool for about 10 minutes before serving.
  • Serve the berry crisp warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
