Vegetarian Burger

Ingredients
  

For the Patties:

  • 2 cups cooked and drained black beans canned or cooked from dried
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper any color
  • 2 cloves garlic minced
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg or flax egg for vegan option
  • 2 tbsp olive oil for cooking

For Assembling:

  • 4 whole wheat burger buns
  • 4 slices cheddar cheese or vegan cheese
  • Lettuce leaves
  • Sliced tomatoes
  • Sliced red onion
  • Pickles
  • Ketchup and mustard optional

Instructions
 

  • In a large mixing bowl, mash the black beans using a fork or potato masher until mostly smooth but with some texture remaining.
  • Add breadcrumbs, chopped onion, chopped bell pepper, minced garlic, cumin powder, paprika, salt, black pepper, and egg (or flax egg). Mix well until all ingredients are combined.
  • Divide the mixture into 4 equal portions. Shape each portion into a patty, making sure they are firm and hold together well.
  • Heat olive oil in a skillet over medium heat.
  • Once the skillet is hot, add the patties and cook for about 4-5 minutes on each side or until they are golden brown and cooked through.
  • In the last minute of cooking, place a slice of cheddar cheese on top of each patty and cover the skillet with a lid to allow the cheese to melt.
  • While the patties are cooking, prepare your burger buns by toasting them lightly in a toaster or on a grill.
  • To assemble the burgers, place lettuce leaves on the bottom half of each bun, followed by a cooked patty with melted cheese.
  • Top the patties with sliced tomatoes, red onion, and pickles.
  • Add ketchup and mustard if desired.
  • Place the top half of the bun on each burger to complete the assembly.
  • Serve your delicious vegetarian cheeseburgers with your favorite side dishes, and enjoy!
