Swiss Chard and White Bean Casserole
Ingredients
- 2 tablespoons 30 ml olive oil
- 1 large onion chopped
- 2 garlic cloves minced
- 1 bunch Swiss chard stems removed and leaves chopped
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt to taste
- Black pepper to taste
- 2 cans 15 oz / 425 g each white beans, drained and rinsed
- 1 cup 240 ml vegetable broth
- 1/2 cup 120 ml vegan cream
- 1 cup 100 g vegan cheese, grated
- 1/2 cup 50 g breadcrumbs
Instructions
- Preheat the oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic and sauté for 4–5 minutes, until translucent and fragrant.
- Add the chopped Swiss chard, dried thyme, smoked paprika, salt, and black pepper. Cook for 3–4 minutes, until the chard has wilted.
- Stir in the white beans, vegetable broth, and vegan cream. Bring to a gentle simmer and cook for 5 minutes.
- Transfer the mixture to a lightly greased baking dish and spread evenly.
- Sprinkle the grated vegan cheese evenly over the top, followed by the breadcrumbs.
- Bake for 25 minutes, or until the top is golden and crispy.
- Let cool slightly before serving.
