Vegetarian Haupia
Alright everyone, there’s a new dish I want you to try. It’s called “Haupia” and I’m totally obsessed with it! It’s a slightly gelatinous coconut pudding (think, “pudding meets Jell-O”) eaten in Hawaii and other Polynesian islands. I went to Hawaii recently and - surprise, surprise - I miss it already. Luckily one bite of this tropical treat instantly whisks me away to Waikiki. I’m sure it will do the same for you. To me, this is the perfect summer sweet. Extra points if you’re able to enjoy it on a sandy beach!
Ingredients
- 1 cup coconut milk
- 2 cups plant-based milk e.g., almond, soy, oat
- 1/2 cup cornstarch
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Fresh fruit for garnish e.g., sliced mango, berries
- Shredded coconut for garnish optional
Instructions
- In a bowl, whisk together the cornstarch, sugar, and salt until well combined.
- In a saucepan, mix the dry ingredients with coconut milk and plant-based milk. Stir well to ensure there are no lumps.
- Place the saucepan over medium heat and bring the mixture to a gentle boil. Stir continuously to prevent sticking or lumps.
- Once it starts to boil, reduce the heat to low and simmer for about 5-7 minutes or until the mixture thickens. Stir in the vanilla extract.
- Remove the saucepan from heat and pour the haupia mixture into serving glasses or bowls.
- Allow the haupia to cool at room temperature, then cover each container with plastic wrap and refrigerate for at least 2 hours or until set.
- Before serving, garnish the haupia with fresh fruit slices and shredded coconut if desired.
- Serve chilled and enjoy the delicious vegetarian haupia as a refreshing dessert!
